To cook it, simply combine boiled and drained lentils, seitan, natural tofu and tomato paste, as well as a mashed potato, form a loaf and roll it into a cylinder in baking paper, sealing the edges tightly. It is then cooked in a pot with soy sauce and vegetable stock. After letting it cool, you should cut it into slices and serve it to your dinner guests accompanied by your favorite side dish: baked potatoes, polenta or mashed potatoes. If you want an extra touch, you can also add aromatic herbs like sage and thyme when preparing the vegan roll.

  • 100 G already boiled lentils

Instructions

  • Knead with our hands until we have a soft and homogeneous dough.

  • Take a wet sheet of baking paper and roll the mixture to form a roll, a cylinder to close tightly at both ends with kitchen twine.

  • Take a pot, pour in the soy sauce and vegetable stock and let it boil.

  • When it boils, put the vegan cotechino in the pan and cook it for 60 minutes on low heat.

  • After draining it, place it on a cutting board and let it harden and cool. Then cut it with a smooth blade knife after removing the baking paper.

  • Serve on a bed of mash or with a side of fries.
